Plov (osh)
The centrepiece of any Uzbek meal: meat, onions and yellow carrots are cooked into a rich base in a kazan, then rice is steamed on top. UNESCO-listed since 2016.

A salad of thinly sliced tomato, onion and hot pepper — plov’s constant companion.
Achichuk (achchiq-chuchuk, in places called shakarob) is a light salad of ripe tomatoes, onion and hot pepper, sometimes with cucumber. The tomatoes are cut into thin rounds and the onion into paper-thin rings, which are rubbed with salt or rinsed in cold water to take away their bite. It is seasoned with salt, black pepper and basil — and no oil.
The name describes the taste: achchiq means sharp or hot in Uzbek, chuchuk mild.
Its fresh, tangy heat balances rich plov, so plov is hardly ever served without it; it also goes well with kabob and qozon kabob. It is at its best in summer, when tomatoes are sweetest.
