Plov (osh)
The centrepiece of any Uzbek meal: meat, onions and yellow carrots are cooked into a rich base in a kazan, then rice is steamed on top. UNESCO-listed since 2016.

A thick porridge of wheat and meat stirred for hours — a hearty dish of early spring and cold days.
For halim, hulled wheat and meat on the bone (lamb or beef) are simmered together and stirred for hours. When the meat has fallen into threads and become one with the grain, the halim is ready. It is finished with melted butter and, if you like, a pinch of cinnamon.
Related dishes are known across Central Asia, Iran and South Asia, with names and recipes that change from place to place.
In Uzbekistan halim is cooked mainly in early spring, in the run-up to Navruz, and on cold days. At Navruz fairs cauldrons of halim bubble alongside the sumalak. In season some teahouses make it for breakfast, so go early.
